The Dayton Children’s dietitians enjoy celebrating birthdays! In July, I coordinated honoring the month’s lone birthday, Theresa, who also happens to follow a gluten free diet. I reached out to my good friend who also has Celiac for a simple seasonal gluten free dessert recipe. Gluten free foods are more available and convenient which made for an easy dessert.
The identified recipe was the classic Strawberry Pretzel Dessert from Kraft with a simple change: use gluten free pretzels — which I was able to find easily at a local grocery store. Additionally, I modified the recipe using low fat cream cheese and sugar free jello. I liked that I was able to add strawberries which made it refreshing for a summer dessert.
