Recipe: Gluten free strawberry pretzel dessert

strawberry gluten freeThe Dayton Children’s dietitians enjoy celebrating birthdays! In July, I coordinated honoring the month’s lone birthday, Theresa, who also happens to follow a gluten free diet. I reached out to my good friend who also has Celiac for a simple seasonal gluten free dessert recipe. Gluten free foods are more available and convenient which made for an easy dessert.

The identified recipe was the classic Strawberry Pretzel Dessert from Kraft with a simple change: use gluten free pretzels — which I was able to find easily at a local grocery store. Additionally, I modified the recipe using low fat cream cheese and sugar free jello. I liked that I was able to add strawberries which made it refreshing for a summer dessert.

    I am gluten and lactose intolerant. You could sub the Earth balance brand dairy free butter for the margarine and Tofutti brand ‘Better Than Cream Cheese’ (both excellent products) in this recipe, with likely excellent results. This would satisfy the needs of the lactose intolerant population as well. (Hard to find dessert recipes that meet both!)

    Oops- see there is 2 T. Milk- could use a plant-based milk. The cool whip would not be dairy free but there may be similar products available at health food stores that are lactose free – I am not certain.
